🌿 Ingredients

  • 1 cup fresh strawberries, hulled and sliced (reserve a few for garnish)
  • 1–2 tbsp honey or maple syrup (adjust to taste)
  • 1 cup Greek yogurt or coconut yogurt (for dairy-free)
  • 2–3 tbsp Tiiga Baobab Powder (start with 2 tbsp; adjust to taste)
  • 1 tsp vanilla extract
  • ½ cup whipped cream or coconut whip (optional for extra richness)
  • ½ cup granola or crushed heart-shaped cookies (for layering)
  • Optional garnishes: mint leaves, chocolate shavings, extra berries

🍓 Directions

Macerate the Strawberries

  • Place sliced strawberries in a bowl. Drizzle with 1 tbsp honey or maple syrup. Stir gently and let sit while you prepare the rest (this releases juices and brings out sweetness).

Make the Baobab-Yogurt Mixture

  • In a medium bowl, combine the Greek yogurt (or coconut yogurt), baobab powder, 1–2 tbsp honey/maple, and vanilla extract.
  • Stir until smooth and the baobab is fully incorporated. The baobab’s natural tang and citrusy notes will add a bright, refreshing twist.

Whip It (Optional)

  • For a lighter, mousse-like texture, gently fold in whipped cream or coconut whip.

Layer the Parfaits

  • In pretty serving glasses, start with a spoonful of the baobab-yogurt mixture.
  • Add a layer of macerated strawberries and a sprinkle of granola or crushed cookies.
  • Repeat layers (2–3 total) until glasses are filled.

Garnish & Chill

  • Top with reserved strawberry slices, a mint leaf, and optional chocolate shavings.
  • Chill in the fridge for at least 30 minutes before serving — it will firm up and meld flavors.
